Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage mild or spicy
  • 1 small yellow onion chopped
  • 2 carrots peeled and chopped
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 1 cup dried brown or green lentils rinsed
  • 1 can diced tomatoes 14.5 ounces
  • 6 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon dried thyme
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • 2 cups chopped spinach or kale optional
  • 1 tablespoon fresh lemon juice optional
  • 2 tablespoons chopped fresh parsley optional
  • Grated Parmesan cheese optional, for serving

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the sausage and cook for 6 to 8 minutes, breaking it apart with a spoon, until browned.
  • If there is too much grease, drain some of it from the pot.
  • Add the onion, carrots, and celery.
  • Cook for 5 to 6 minutes, stirring sometimes, until the vegetables start to soften.
