Ingredients

  • 1 cup Arborio rice
  • 4 cups beef broth kept warm
  • 1 small onion finely chopped
  • 2 tablespoons butter
  • ½ cup grated Parmesan cheese
  • 1 pinch saffron threads
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • In a small bowl, soak saffron in 2 tablespoons of warm broth and set aside.
  • In a pan, heat olive oil and half the butter. Add onion and cook until soft.
  • Add Arborio rice and stir for 1–2 minutes until coated and slightly translucent.
  • Begin adding broth one ladle at a time, stirring constantly. Wait until it’s absorbed before adding more.
  • After about 10 minutes, stir in the saffron-infused broth.
  • Continue adding broth and stirring until the rice is creamy and cooked (about 20–25 minutes total).
  • Turn off heat. Stir in Parmesan cheese and remaining
