Pea Risotto

Pea risotto is a creamy and comforting dish that’s simple to make and full of fresh flavor. It’s made with soft Arborio rice, sweet green peas, and a bit of cheese for richness. As the rice cooks slowly in warm broth, it becomes creamy and smooth without needing any cream.

The peas add a pop of color and a gentle sweetness that makes this dish light and tasty. It’s great for springtime but works all year round. Whether served as a main dish or a side, pea risotto is an easy, delicious meal that feels both simple and special.

Why This Recipe Works

This recipe works because Arborio rice is perfect for risotto. As you slowly add warm broth and stir, the rice releases starch, making the dish naturally creamy. The peas are added near the end so they stay bright and slightly crisp, adding a fresh bite that balances the richness of the cheese and butter. Parmesan brings salty flavor and blends everything together nicely.

Another reason this dish is great is because it’s easy to customize. You can add lemon zest, fresh herbs, or even a bit of mint for extra freshness. It’s simple, uses just a few ingredients, and gives you a comforting bowl of food that's warm, colorful, and satisfying.

Ingredients

Arborio Rice – A starchy rice that becomes creamy as it cooks. You can also use Carnaroli rice.

Green Peas – Sweet and tender. Fresh or frozen peas both work well.

Vegetable Broth – Addsflavor to the rice while cooking. You can use chicken broth if not keeping it vegetarian.

Parmesan Cheese – Gives the risotto a rich, cheesy flavor. Use vegan cheese or nutritional yeast as a substitute.

Onion – Adds a mild, sweet taste. Shallots can also be used.

Tips

  • Use warm broth for smooth, even cooking.
  • Stir often to make the risotto creamy.
  • Add peas near the end so they stay bright and fresh.
  • Add lemon zest or juice for extra freshness.
  • Finish with a little butter or olive oil for extra richness.

How to Serve

Pea risotto is a creamy, fresh-tasting dish that's perfect for spring or anytime you want a light and flavorful meal. The sweetness of the peas and the creaminess of the rice make this risotto feel fancy, even though it's easy to make. It's filling, colorful, and works great as a vegetarian main or side.

  • With Grilled Chicken or Fish – Makes a full, balanced meal.
  • Topped with Fresh Herbs – Add chopped mint, parsley, or basil for extra flavor.
  • With a Side Salad – A crisp green salad goes well with the soft risotto.
