Pan-Seared Cod

Pan-seared cod is the kind of dinner I make when I want something crisp, light, and fast without sacrificing flavor. A hot skillet gives the fish a crust while the center stays moist and flaky.

I like finishing it with butter, garlic, and lemon so the pan sauce does all the work. It is simple enough for a weeknight, yet polished enough to serve when friends come over for dinner.

Why This Recipe Works

Pan-seared cod works because the cooking method gives the fish plenty of texture without hiding its mild flavor. Starting with a hot skillet helps create a golden exterior, while keeping the cooking time short prevents the delicate flesh from drying out. Butter added near the end brings richness, and garlic and lemon brighten the pan juices.

The recipe also relies on very few ingredients, so technique matters more than complicated seasoning. Patting the cod dry encourages proper browning, and leaving the fillets undisturbed during the first few minutes helps the crust develop. Once flipped, the fish only needs a brief finish on the second side. The result is tender, flaky cod with crisp edges and a simple buttery sauce that works beautifully with vegetables, rice, or potatoes.

Ingredients

Cod Fillets: Thick cod fillets stay tender inside while developing a good sear on the surface. Haddock, halibut, or pollock can substitute, although cooking times may vary.

Olive Oil: Olive oil handles the initial searing and helps the fish brown evenly. Avocado oil is a good substitute if you want a more neutral flavor.

Unsalted Butter: Butter adds richness and creates the base of the quick pan sauce. Salted butter works too, but reduce the added salt slightly.

Garlic: Fresh garlic adds savory aroma to the butter as the fish finishes cooking. Garlic powder can work in a pinch, though fresh cloves give better flavor.

Lemon: Lemon juice cuts through the richness of the butter and keeps the cod tasting fresh. Lime can substitute for a sharper citrus note.

Tips

  • Pat the cod completely dry before seasoning so the surface browns instead of steaming.
  • Use a heavy skillet that holds heat well for the most even sear.
  • Do not move the fillets during the first few minutes or the crust may tear.
  • Flip the cod gently with a thin spatula because the cooked fish can break apart easily.
  • Remove the cod as soon as it reaches 145°F to keep the center moist and flaky.

How to Serve

Pan-seared cod is best served immediately, while the outside still has its crisp texture and the butter sauce is warm. Spoon the garlic and lemon pan juices over each fillet just before serving. Since cod has a mild flavor, it pairs easily with both light vegetables and more comforting sides.

  • Serve it with roasted baby potatoes, asparagus, and extra lemon wedges for a simple dinner.
  • Pair the cod with rice pilaf, steamed green beans, and a cucumber salad for something lighter.
  • Spoon it over creamy mashed cauliflower or mashed potatoes and add sautéed spinach for a cozy meal with plenty of texture.

Ingredients

  • 4 cod fillets about 6 ounces each
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 3 garlic cloves minced
  • 1 lemon
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon chopped fresh parsley
  • Lemon wedges for serving

Instructions

  • Pat the cod fillets completely dry with paper towels. Season both sides with salt, black pepper, and paprika.
  • Heat the olive oil in a large skillet over medium-high heat until shimmering.
  • Add the cod fillets and cook without moving them for 3 to 4 minutes, until the bottoms are golden and release easily from the pan.
  • Carefully flip the fillets and reduce the heat to medium. Add the butter and garlic to the skillet.
  • Cook for another 3 to 4 minutes, spooning the melted garlic butter over the fish as it cooks.
  • Squeeze the juice of half the lemon into the skillet and continue cooking until the cod flakes easily and reaches 145°F internally.
  • Remove from the heat, sprinkle with fresh parsley, and serve immediately with the pan sauce and lemon wedges.
