Ingredients

For the Pie

  • 1 baked 9-inch pie crust
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • cups water
  • 4 large egg yolks
  • ½ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons unsalted butter

For the Meringue

  • 4 large egg whites
  • ½ teaspoon cream of tartar
  • ½ cup granulated sugar
  • ½ teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F.
  • In a medium saucepan, whisk together the sugar, cornstarch, and salt.
  • Slowly whisk in the water until smooth.
  • Place the saucepan over medium heat and cook, stirring often, until the mixture starts to thicken.
  • In a small bowl, whisk the egg yolks.
  • Slowly add about ½ cup of the hot sugar mixture into the egg yolks while whisking.
  • Pour the egg yolk mixture back into the saucepan.
