Ingredients

  • 1 cup lentils
  • 2 cups water or broth
  • 2 tbsp. oil
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 2 cups tomatoes chopped or canned
  • 1 tbsp. curry powder
  • ½ tsp. salt or to taste
  • ¼ tsp. black pepper
  • ½ tsp. cumin optional
  • 2 tbsp. fresh cilantro chopped (optional)

Instructions

  • Rinse lentils under cold water.
  • In a pot, bring lentils and water to a boil.
  • Reduce heat and simmer for 20-25 minutes until soft.
  • In another pan, heat oil over medium heat.
  • Add onion and cook until soft.
  • Add garlic and cook for about 30 seconds.
  • Add tomatoes, curry powder, cumin, salt, and pepper.
  • Cook for 5-7 minutes until slightly thick.
  • Add cooked lentils to the sauce and mix well.
  • Simmer for another 5-10 minutes.
  • Garnish with cilantro and serve warm.
