Italian Wedding Soup

Italian Wedding Soup is a comforting and flavorful dish that combines tender meatballs, fresh greens, and tiny pasta in a warm, savory broth. Despite its name, it doesnโ€™t come from weddings but refers to the "marriage" of flavors in the soup.

It's simple to prepare and perfect for family dinners or when you need a cozy meal on a chilly day. With its blend of protein, vegetables, and a hint of Parmesan, this soup is both satisfying and nutritious.

Why This Recipe Works

This recipe stands out because it brings together wholesome ingredients in a way that's easy to make and delicious to eat. The homemade meatballs are seasoned just right, adding heartiness to the soup, while the fresh greens provide a burst of nutrients. The tiny pasta adds texture and makes every bite complete.

You should make this soup because itโ€™s a one-pot meal thatโ€™s quick enough for weeknights but impressive enough for special occasions. Itโ€™s customizable to suit your preferences, and the leftovers taste even better the next day. Whether youโ€™re feeding a crowd or enjoying it solo, this soup is always a hit!

Ingredients

Ground Meat (Beef and Pork):Used for juicy meatballs, adding flavor and protein. Substitute with turkey or chicken for a lighter option.

Spinach (or Escarole):Brings a fresh, nutritious touch. Kale or Swiss chard can work if spinach isnโ€™t available.

Small Pasta (Acini di Pepe):Gives the soup a nice, hearty texture. Orzo or ditalini are good alternatives.

Chicken Broth:The base of the soup, providing a rich and comforting flavor. Vegetable broth can be used for a vegetarian version.

Parmesan Cheese:Adds a savory, cheesy depth. Pecorino Romano can be used instead if preferred.

Tips

  • Roll small, bite-sized meatballs for even cooking.
  • Use freshly grated Parmesan for the best flavor.
  • Add pasta just before serving to prevent it from absorbing too much broth.
  • Simmer gently to keep the soup clear and flavorful.
  • Adjust salt and pepper after the soup has cooked.

How to Serve

Italian Wedding Soup is a warm and hearty dish perfect for family meals or gatherings. Itโ€™s best served fresh with crusty bread or a simple side salad.

  • Pair with garlic bread for a comforting meal.
  • Serve with a green salad and vinaigrette for balance.
  • Add a sprinkle of extra Parmesan and cracked pepper on top for a gourmet touch.
