Instant Pot Zesty Meatballs

A unique combination of ground pork with ginger, garlic, lemongrass, lime and authentic Asian sauces… This super-easy recipe prepares juicy, spicy and tangybut exceptionally tasty meatballs that will fulfill your expectations nicely.

  • 1 1/2 lb ground pork
  • 2 tbsp fresh ginger grated
  • 1 tbsp garlic minced
  • 1 tbsp lemongrass paste
  • 1 tsp fresh lime zest grated
  • 2 tbsp fresh lime juice
  • 1 tbsp soy sauce
  • 1/2 tsbp chili paste
  • salt as required
  • 1 1/2 cups beef broth
  • 1 tbsp soy sauce
  • 1/2 tbsp fish sauce
  • For meatballs: in a large bowl, add all the ingredients and with your hands, mix until well combined.
  • Make golf ball sized meatballs from the mixture and arrange onto a large parchment paper lined baking sheet.
  • Freeze or about 20 minutes.
  • In the pot of Instant Pot, place the meatballs and top with broth, soy sauce and fish sauce.
  • Secure the lid and turn to “Seal” position.
  • Cook on “Manual” with “High Pressure” for about 5 minutes. 
  • Press “Cancel” and allow a natural release for about 10 minutes and then, do a quick release.
  • Carefully, remove the lid and serve.
