  • 1 pound chicken breast cut into 1-2- inch pieces
  • 2 tbsp olive oil
  • 1/3 cup white wine vinegar
  • 1 tbsp honey
  • 1/4 cup coconut sugar
  • 2 tbsp fresh minced ginger
  • 1/2 cup water
  • 1/4 cup green onion chopped
  • 3 tbsp arrowroot powder
  • 1/2 cup soya sauce
  • 2 tbsp tomato paste
  • 1 tbsp almond butter
  • 2 garlic cloves crushed
  • 3 tbsp red hot chili pepper chopped
  • 2 tbsp sesame seeds
  • Dredge chicken in arrowroot powder and keep aside for 5 minutes.
  • Sauté for 3 minutes on each side and cancel the sauté function.
  • Whisk together all the remaining ingredients in a separate bowl to make a paste.
  • Add this paste to the Instant Pot and lock the lid.
  • Set the Instant Pot to “Manual” mode for 8 minutes at high pressure.
  • Release the pressure naturally and dish out the chicken.
  • Sprinkle sesame seeds and green onion over it.
