Instant Pot Tomato Basil Soup with Meatballs

Ingredients

  • 4 tbsp butter
  • 2 pinches pepper
  • 2 tbsp fresh basil leaves chopped
  • 1 medium carrot roughly chopped
  • 1 medium onion roughly sliced
  • 1 medium potato roughly sliced
  • 1(28 oz) can tomatoes
  • 3 tbsp tomato paste
  • 3 tbsp sun-dried tomatoes
  • 1/2 bag (24 oz) frozen fully cooked beef meatballs
  • 4 cups water
  • 2 tsp salt

Instructions

  1. Add butter, pepper, chopped basil leaves, onions and carrots and sauté for 3 minutes with constant stir.

  2. Now add canned tomatoes, potatoes, tomato paste, sun-dried tomatoes, water and salt.

  3. Set to the “Manual” at high pressure for 5 minutes.

  4. Select the “Cancel” and release pressure quickly.

  5. Blend the contents of the Instant Pot to a smooth consistency and keep aside.

  6. Add water to the Instant pot and place a streamer.

  7. Keep frozen meatballs on a streamer and set to the “Manual” at high pressure for 5 minutes.

  8. Select the “Cancel” and release pressure quickly.

  9. Remove the meatballs from the instant pot and transfer to a plate.

  10. Add soup to Instant pot and select “Sauté”.

  11. Add meatballs to soup and simmer for 1 minute.

  12. Serve hot with a swirl of fresh or sour cream.
