Instant Pot Tofu & Green Beans Curry

An authentic Thai recipe of tofu and green beans curry… Tofu and green beans are flavored with a delish sauce of coconut milk, peanut butter, cashews, lime, curry powder and traditional Asian sauces.

Ingredients
  • 1 cup water
  • 1 lb fresh green beans trimmed and chopped into 1½-inch pieces
  • 1 (14-ounce) can coconut milk
  • 1/2 cup water
  • 3 tbsp peanut butter
  • 2 tbsp curry paste plus 1 tsp
  • 1 tbsp coconut oil
  • 2 dried red chilies broken into pieces
  • 1 small onion chopped
  • 1/4 cup raw cashews
  • 2 tsp fresh ginger grated
  • 2 tsp garlic grated
  • 3 tsp rice vinegar
  • 1 tsp fish sauce
  • 1 tsp soy sauce
  • 1 tsp coconut sugar
  • 1/4 tsp ground turmeric
  • 8 ounces extra-firm tofu drained and cubed
  • 1 tbsp fresh lime juice
Instructions
  • For green beans: In the bottom of Instant Pot, arrange a steamer trivet and pour water.
  • Place green beans on top of the trivet.
  • Secure the lid and turn to “Seal” position.
  • Cook on “Manual” with “High Pressure” for about 5 minutes.
  • Press “Cancel” and do a quick release.
  • Carefully, remove the lid and transfer the green beans into a bowl. Set aside.
  • Remove the water from the pot and with paper towels, pat dry it.
  • For curry: in a bowl, add the coconut milk, water, peanut butter, water and curry paste and beat until well combined. Keep aside.
  • Add the oil in the Instant Pot and select “Sauté”. Now, add the dried red chili and cookfor about 30 seconds.
  • Add the onion and cook for about 1 minute.
  • Add cashews and cook for about 1 minute.
  • Stir in the ginger and garlic and cook for about 1 minute.
  • Add the coconut milk mixture and cook for about 1 minute.
  • Press “Cancel” and stir in remaining ingredients except the lime juice.
  • Secure the lid and turn to “Seal” position.
  • Cook on “Manual” with “High Pressure” for about 2 minutes.
  • Press “Cancel” and do a quick release.
  • Carefully, remove the lid and select“Sauté”.
  • Stir in green beans and cook for about 1-2 minutes.
  • Press “Cancel” and stir in lime juice before serving.
