Instant Pot Sweet & Spicy Carrot Noodles Soup
- 2 tbsp olive oil
- 1/4 cup white onion chopped
- 2 garlic cloves minced
- 2 Serrano peppers seeded and chopped
- 3 large carrots peeled and spiralled with blade c
- 2 tbsp fresh lime juice
- 8 drops liquid stevia
- to taste Salt and freshly ground black pepper
- 1/4 cup scallion chopped
- 1/2 heavy cream
- 4 cup vegetable broth
Pour oil in the Instant Pot and select sauté.
Add onion and cook for about 4-5 minutes.
Add garlic, cream, carrots and Serrano peppers and sauté for 1 minute.
Secure the lid and cook under “Manual” and “High Pressure” for about 4 minutes.
Select the “Cancel” and carefully do a Quick release.
