Instant Pot Succotash with Herb Rice

  • 2 cup herb rice cooked
  • 2 cup water
  • 1 ½ cup lima beans
  • 3 tbsp olive oil
  • 2 cup tomatoes
  • 1 cup bell pepper
  • 2 cup corn kernels
  • 1 ½ tbsp salt
  • Put olive oil and bell pepper in the instant pot and Sauté for 4 minutes.
  • Add all the rest ingredients except herb rice and stir well.
  • Lock the lid and set the instant pot to “Manual” and cook for 12 minutes at high pressure.
  • Release the pressure naturally and put the herb rice and simmer for 30 seconds.
  • Serve hot and garnish with fresh herbs.
