  • 6-8 medium sized artichokes clean and trim
  • 1 cup water
  • 4-6 slices bacon crumbled and cooked
  • 1 cup hard cheese like pecorino, grana or any other
  • 2 tsp salt
  • 1 tsp pepper
  • 1/2 tsp nutmeg powder
  • 2 cups stale breadcrumbs
  • 2 tbsp olive oil
  • Place artichokes upside down for opening and creating a hole or dent in the centre.
  • In a mixing bowl, mix all the ingredients and reserve half the cheese for using a topping. Lastly, mix crumbled bacon to the mixture.
  • Take the artichokes and fill them well with this filling.
  • Garnish with the remaining half cheese.
  • Garnish with the remaining half cheese.
  • Place the stuffed artichokes on the rack into the Instant Pot.
  • Set to the “Manual” at high pressure for 10 minutes.
  • Select “Cancel” and release pressure quickly.
  • Remove the stuffed artichokes on a serving platter.
