Instant Pot Stuffed Artichokes with Bacon

  • 6-8 medium sized artichokes (clean and trim)
  • 1 cup water
  • 4-6 slices bacon (crumbled and cooked)
  • 1 cup hard cheese like pecorino, grana or any other
  • 2 tsp salt
  • 1 tsp pepper
  • 1/2 tsp nutmeg powder
  • 2 cups stale breadcrumbs
  • 2 tbsp olive oil
  1. Place artichokes upside down for opening and creating a hole or dent in the centre.

  2. In a mixing bowl, mix all the ingredients and reserve half the cheese for using a topping. Lastly, mix crumbled bacon to the mixture.

  3. Take the artichokes and fill them well with this filling.

  4. Garnish with the remaining half cheese.

  5. Garnish with the remaining half cheese.

  6. Place the stuffed artichokes on the rack into the Instant Pot.

  7. Set to the “Manual” at high pressure for 10 minutes.

  8. Select the “Cancel” and release pressure quickly.

  9. Remove the stuffed artichokes on a serving platter.
