Instant Pot Steamed Tomatoes with Potato Mash
- 3 large tomatoes slice off ¼ bulb from the top and remove pulp
- 1 cup water
- 2 tbsp herb butter
- 1 cup potato mash cooked
- 1 cup mozzarella cheese shredded
Add water to the Instant Pot and place the rack on it.
Place the hollow whole tomato on the rack and set to the “Manual” at high pressure for 5 minutes.
Select “Cancel” and release the pressure naturally.
Remove the softly steamed tomato very carefully.
Keep this whole tomato stuffed with potato mash, cheese and herb butter on a grill rack in the oven for 5 minutes to get crispy skin.
Serve with your choice of filling.
