  • 4 fresh eggs beaten
  • 1/2 pound sausage chopped
  • 1/2 sweet potato peeled and shredded
  • 1 small red bell pepper seeded and chopped
  • 1/2 onion chopped
  • 1 tsp garlic cloves minced
  • 1 tsp fresh basil chopped
  • 1 tbsp coconut oil
  • to taste Salt and freshly ground black pepper
  • Pour the oil in the Instant Pot and select “Sauté”.
  • Add onion, bell pepper and garlic and sauté for about 2 minutes.
  • Add all ingredients to Instant Pot and secure the lid and cook under “Manual” and “High Pressure” for about 28 minutes.
  • Select “Cancel” and carefully do a quick release.
  • Uncover the lid and serve hot.
