Instant Pot Saffron Prawns with Risotto
- 2 cup Arborio rice soaked and drained
- 8 large Prawns deveined
- 2 onions chopped
- 4 tbsp olive oil
- 2 tbsp garlic minced
- 1 cup seafood inventory
- 6-7 strands of saffron emulsified in water
- 1/2 cup parmesan cheese
- 2 tbsp lemon juice and zest
- 2 ½ cup rooster broth
Put olive oil and deveined prawns in the instant pot and cook till tender and juicy.
Add garlic and onions in the instant pot and Sauté for 2 minutes.
Stir Arborio rice in and let it coat olive oil well.
Add saffron emulsion, lemon juice and zest and seafood inventory to the Arborio rice in the instant pot.
Close the lid and set the set the instant pot to “Manual” and cook for 20 minutes at high pressure.
Release the pressure naturally and stir in the cheese and serve.
