Instant Pot Prawns in Coconut Milk

  • 4 large carrots peeled and diced
  • 1/2 tsp dried thyme
  • 2 tbsp butter
  • 4 potatoes diced
  • 1/4 cup fresh cream
  • 1 bay leaf
  • 1 large onion chopped
  • 1 pound prawns
  • 1 cup chilled water
  • 1 cup corn kernels thawed
  • 2 stalks celery chopped
  • 2 cup fish broth
  • 1 cup coconut milk
  • to taste Salt and black pepper


  1. Put the butter and onions in the Instant Pot and select “Sauté”.

  2. Sauté for 3 minutes and add carrots, prawns, water, thyme, potatoes, fish broth, bay leaf, salt and black pepper.

  3. Set the Instant Pot to “Manual” and “High Pressure” for about 5 minutes.

  4. Release the pressure naturally and stir in the corn, fresh cream and coconut milk.

  5. Select “Sauté” and cook for 3 more minutes.

  6. Dish out and garnish with chopped celery.
