Ingredients
- 2 pound pork brisket
- 1 small onion diced
- 1½ tbsp red boat fish sauce
- 1 bay leaf
- ¾ pound carrots peeled and chopped
- 1½ whole star anises
- 1 tsp salt
- 1½ tbsp ghee
- 1½ tbsp fresh ginger, grated
- 1 large stalk lemongrass cut into 3-inch lengths
- 3/4 cup diced tomatoes
- 1½ tbsp applesauce
- 3/4 cup bone broth
Instructions
- Put ghee and briskets in the Instant Pot and select “Sauté”.
- Sauté for 3 minutes on each side and dish out.
- Put the onions, ginger, diced tomatoes, carrots and red boat fish sauce in the Instant Pot and sauté for 3 minutes.
- Add the seared pork, lemongrass, star anises, bay leaf, applesauce and bone broth and lock the lid.
- Set the Instant Pot to “Manual” at “High Pressure” for 20 minutes.
- Carefully release the pressure naturally and dish out to serve hot.
