  • 2 pound pork brisket
  • 1 small onion diced
  • tbsp red boat fish sauce
  • 1 bay leaf
  • ¾ pound carrots peeled and chopped
  • whole star anises
  • 1 tsp salt
  • tbsp ghee
  • tbsp fresh ginger, grated
  • 1 large stalk lemongrass cut into 3-inch lengths
  • 3/4 cup diced tomatoes
  • tbsp applesauce
  • 3/4 cup bone broth
  • Put ghee and briskets in the Instant Pot and select “Sauté”.
  • Sauté for 3 minutes on each side and dish out.
  • Put the onions, ginger, diced tomatoes, carrots and red boat fish sauce in the Instant Pot and sauté for 3 minutes.
  • Add the seared pork, lemongrass, star anises, bay leaf, applesauce and bone broth and lock the lid.
  • Set the Instant Pot to “Manual” at “High Pressure” for 20 minutes.
  • Carefully release the pressure naturally and dish out to serve hot.
