Ingredients

  • 2 pound pork brisket
  • 1 small onion diced
  • tbsp red boat fish sauce
  • 1 bay leaf
  • ¾ pound carrots peeled and chopped
  • whole star anises
  • 1 tsp salt
  • tbsp ghee
  • tbsp fresh ginger, grated
  • 1 large stalk lemongrass cut into 3-inch lengths
  • 3/4 cup diced tomatoes
  • tbsp applesauce
  • 3/4 cup bone broth

Instructions

  1. Put ghee and briskets in the Instant Pot and select “Sauté”.
  2. Sauté for 3 minutes on each side and dish out.
  3. Put the onions, ginger, diced tomatoes, carrots and red boat fish sauce in the Instant Pot and sauté for 3 minutes.

  4. Add the seared pork, lemongrass, star anises, bay leaf, applesauce and bone broth and lock the lid.

  5. Set the Instant Pot to “Manual” at “High Pressure” for 20 minutes.
  6. Carefully release the pressure naturally and dish out to serve hot.
