Technically, adobo is a technique of cooking vegetables or meat in a solution of peppercorn, soy sauce, vinegar, and onions.

For fragrance, garlic and dried bay leaves are added.

It is a versatile viand that can use different kinds of meat. Even seafood, fish, and vegetables can be cooked the same way.

Ingredients

  • 6 garlic cloves chopped
  • 2 lb pork cuts
  • salt & pepper to taste
  • cup brown sugar
  • ½ cup soy sauce
  • 1 cup white vinegar
  • 1 tablespoon peppercorn
  • 7 Bay leaves
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  • Press saute, add garlic and stir.
  • Add pork and saute until brown.
  • Stir well until the pork becomes whitish.
  • Add salt, black pepper, and brown sugar and stir well.
  • Add soy sauce, white vinegar, peppercorn, and bay leaves and stir well.
  • Close the lid and cook on high pressure for 15 minutes.
  • When cooking time is complete, do a quick release.
  • Press saute, add water mixed with cornstarch and stir well.
  • Press on "Keep warm" and wait for 10 minutes.
  • Serve and enjoy 🙂

  1. This is a native food from the Philippines which is located in Asia that's why soy sauce is part of the ingredients. For vinegar, we use coconut vinegar that is not so acidic and has a natural sweet taste. Probably Spain or Portugal have their adobo version and I would think with tomato sauce but not with soy sauce.

  2. Not sûre about the result, in the description it says "add 1 cup of White vinegar", in the illustration it says "add White wine". Which ingrédient is correct?
