Instant Pot Mutton Pilaf

This mutton pilaf uses wonderful festive rice which are so delightful. It can also be served with any sort of curry.

  • 1 cup basmati rice rinsed
  • 1 lb lamb mutton bone-in
  • 1 tbsp oil
  • 1 cup onion chopped
  • 1 3/4 cups water
  • 1 green chili minced
  • 4 garlic cloves minced
  • 2 bay leaves
  • 6 curry leaves
  • 1/2 tsp mustard seeds
  • 1 cinnamon stick
  • 1 green cardamom ground
  • 1/2 tsp cloves ground
  • 1/4 tsp turmeric powder
  • 1 tsp salt
  • Turn on the instant pot and select sauté.
  • Add oil and whole spices and then sauté for 1 minute.
  • Add garlic, onion, green chili and sauté for 3 minutes.
  • Add spices and mutton and sauté for 4 minutes.
  • Further add water and rice.
  • Close the lid of the instant pot.
  • Set instant pot to Rice at low pressure and cook for 12 minutes. Release the pressure quickly through steam vent.
  • Fluff the rice and dish out.
