Ingredients

  • 2 cup cooked lamb meat chopped
  • 2 pound bok choy sliced into thin strips
  • 2 small yellow onions chopped
  • 2 jalapeño peppers seeded and chopped
  • 1 cup homemade beef broth
  • 2 cup cream
  • 1 tbsp fresh lemon juice
  • 4 tbsp butter
  • to taste Salt and freshly ground black pepper

Instructions

  • Place the oil in the Instant Pot and select “Sauté”.
  • Add the onions and cook for about 3 minutes.
  • Add lamb meat and cook for about 5 minutes.
  • Select the “Cancel” and stir in the jalapeño peppers, bok choy and broth.
  • Secure the lid and cook under “Manual” and “High Pressure” for about 3 minutes.
  • Select the “Cancel” and carefully do a Quick release.
  • Remove the lid and stir in lemon juice, salt and black pepper.
  • Serve hot.
