Instant Pot Fish & Veggie Curry

A delicious curry that is a little spicy but full of delish flavors… This classic curry is made with fish and veggies alongside the coconut milk, fish sauce and curry sauce.

Ingredients
  • 1 1/2 lb catfish fillets
  • 2 cups carrots peeled and sliced
  • 1 red bell pepper seeded and sliced
  • 1 medium zucchini chopped
  • 2 tbsp green curry paste
  • 1 tbsp fish sauce
  • 2 (14-ounce) cans coconut milk
  • 2 cups water
Instructions
  • In the pot of Instant Pot, add all the ingredients and stir to combine.
  • Secure the lid and turn to “Seal” position.
  • Select “Soup” and just use the default time of 60 minutes. 
  • Press “Cancel” and do a quick release.
  • Carefully, remove the lid and serve hot.
