Ingredients
  • 4 ounce bacon chopped
  • 1 lb pork shoulder boneless,cut into 1-inch chunks
  • to taste salt
  • 1 lb beef short ribs boneless,cut into 1-inch chunks
  • 1 lb smoked sausage sliced
  • 1 large onion chopped
  • 2 cloves garlic crushed
  • 1 lb dried black beans rinsed
  • 1/2 tsp baking soda
  • 2 bay leaves
  • to taste Freshly ground black pepper
  • 5 cups water
Instructions
  • Select the “Sauté” of Instant Pot and cook the bacon for about 5 minutes.
  • With a slotted spoon,transfer the bacon into a large bowl, leaving the grease inside the pots.
  • In the pot, add the pork and ½ teaspoon of the salt and sear for about 3 minutes.
  • With a slotted spoon,transfer the pork into the bowl of bacon.
  • Now, add the beef and ½ teaspoon of the salt and sear for about 3 minutes.
  • With a slotted spoon,transfer the beef into the bowl of bacon.
  • Now, add the sausage and cook about 2 minutes.
  • With a slotted spoon,transfer the sausage into the bowl of bacon.
  • In the pan, add the onion,garlic and ½ teaspoon of the salt and cook for about 5 minutes, stirring frequently.
  • Press “Cancel” and stir in the cooked meat mixture, some salt and remaining ingredients.
  • Secure the lid and turn to “Seal” position.
  • Cook on “Manual” with “High Pressure” for about 35 minutes.
  • Press “Cancel” and allow a natural release.
  • Remove the lid and discard the bay leaves.
  • Serve hot.
