Instant Pot Coffee Braised Chuck Roast

An unbelievably tender chuck roast that is flavored with strong black coffee, cocoa powder, onions, lemon juice and spices… This amazingly tasty roast will be more flavorful if served with caramelized onions.

  • 2 tbsp coffee finely ground
  • 1 tbsp cocoa powder
  • 1 tbsp smoked paprika
  • 1 tsp ground ginger
  • 1 tsp red chili powder
  • 1 tsp red pepper flakes crushed
  • Salt and freshly ground black pepper to taste
  • 2 lb beef chuck roast trimmed and cut into 1½-inch cubes
  • 1 cup beef broth
  • 1/2 cup brewed coffee
  • 1 medium yellow onion chopped
  • 2 tbsp fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • For rub: in a small bowl, mix together all ingredients except roast.
  • Rub chuck roast with rub mixture generously.
  • For sauce: in a food processor, add all ingredients and pulse until smooth.
  • In the pot of Instant Pot, place roast and top with sauce evenly.
  • Secure the lid and turn to “Seal” position.
  • Select “Meat/Stew” and just use the default time of 35 minutes. 
  • Press “Cancel” and allow a natural release.
  • Remove the lid and transfer the roast onto a platter.
  • Cut into desired sized slices and serve.
