Instant Pot Chicken & Rice Bowl

A purely healthy and hearty dinner idea for the whole family…  This dinner dish is chock full of deliciously spiced chicken, rice and carrots.

  • 1/2 cup sweet chili sauce
  • 3 tbsp soy sauce
  • 1/2 tbsp fish sauce
  • 1 tsp Sriracha
  • 1 tsp fresh lime juice
  • 1/2 tbsp fresh ginger minced
  • 1/2 tbsp garlic minced
  • 2 tbsp olive oil
  • 4 chicken breasts
  • 1 cup uncooked long grain white rice
  • 2 cups chicken broth
  • shredded carrots for topping
  • Chopped scallion for topping
  • For sauce: in a bowl, add all ingredients and mix until well combined.
  • Place the oil in the Instant Pot and select “Sauté”. Then add the chicken breasts and cook for about 2-3 minutes per side.
  • Press “Cancel” and transfer the chicken into bowl.
  • Add sauce and stir to combine.
  • In the pot of instant pot, place rice and top with chicken with sauce, followed by broth.
  • Secure the lid and turn to “Seal” position.
  • Cook on “Manual” with “High Pressure” for about 10 minutes.
  • Press “Cancel” and allow a natural release.
  • Remove the lid and transfer chicken into a bowl,
  • With 2 forks, shred the meat and mix with rice.
  • Divide rice mixture into serving bowls.
  • Top with vegetables and scallion and serve.

I’m surprised at the miracles of the instant pot, which can prepare things so rapidly. While making it, I was thinking that you haven’t added any salt. But I realized how much salt the sauces possess. The dish came out so delicious. Thanks for the recipe!

    1. Yes! You are right about the salt. I use less salt in my recipes as I desire. Soy sauce is salty too. If you like it salty, you can add salt to it. I’m glad that you like the recipe!

  2. Thanks for this chicken and rice bowl recipe! It is my favourite dish and I have made it twice already. I want to ask that would I just double all the ingredients if I have to double the quantity?

    1. Thanks for liking the recipe! For doubling the recipe, double all the ingredients simply, but don’t overfill the Instant Pot, because rice have starch and it can clog the valve. For that, I would recommend an 8 quart instant pot.

      1. I enjoyed this meal for two days, my good luck! First time, I eat them straight out of the Instant pot and the next time I eat them in lunch in my office. I enjoyed them equally both the times, first time steaming hot and the second time, the flavours are totally infused and come together in the leftover. Thanks for the recipe!
