Simply mix eggs with cheese and tomatoes and get a perfect brunch dish.

  • 3 large eggs
  • 1/2 small white onion
  • 1 cup soft cheese like feta crumbled
  • 2 tbsp cheddar cheese
  • to taste salt
  • 1 cup cherry tomatoes halved
  • 1/2 tbsp ghee
  • 1 tbsp herbs like chives or basil
  • to taste black pepper
  • Pour the ghee in the Instant Pot and select “Sauté”.
  • In a bowl, add eggs and beat until light. Combine with all the ingredients and mixed well.
  • Transfer mixture into Instant Pot and cook for 2 minutes.
  • Secure the lid and cook under “Manual” and “High Pressure” for about 5 minutes.
  • Select “Cancel” and quickly release the pressure.
  • Remove the lid and serve hot.
