Instant Pot Cheesy Frittata with Tomatoes
- 3 large eggs
- 1/2 small white onion
- 1 cup soft cheese like feta crumbled
- 2 tbsp cheddar cheese
- to taste salt
- 1 cup cherry tomatoes halved
- 1/2 tbsp ghee
- 1 tbsp herbs like chives or basil
- to taste black pepper
Pour the ghee in the Instant Pot and select “Sauté”.
In a bowl, add eggs and beat until light. Combine with all the ingredients and mixed well.
Transfer mixture into Instant Pot and cook for 2 minutes.
Secure the lid and cook under “Manual” and “High Pressure” for about 5 minutes.
Select the “Cancel” and quickly release the pressure.
Remove the lid and serve hot.
