Instant Pot Carnitas Paleo
- 6 lb pork shoulder cut into 2 inch cubes
- 12 garlic cloves peeled and smashed
- 1/2 cup lime juice
- 2 tbsp chili powder
- 4 tbsp ghee
- 2 onions diced
- 12 cup orange juice
- 2 tbsp cumin
- 4 tbsp oregano
- 1 tsp chipotle powder
- salt to taste
Add cumin, lime juice, orange juice, chili powder, oregano, chipotle powder and salt in a large bowl. Mix well.
Meanwhile, add ghee in the inner pot of Instant pot and select “Sauté”.
Now, add pork cubes and select the “Cancel” button when the pork is browned on all the sides.
Pour the juice mixture in the Instant pot and add diced onions and garlic.
Close the lid and press the “Manual” button.
Cook for about 30 minutes on HIGH pressure and release the pressure naturally through the steam vent.
Open the lid and take out the pork.
Shred the pork with two forks and serve.
