Instant Pot Blueberry Compote

  • 1 lb blueberries washed
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 1/4 tsp cinnamon powder
  • 2 tbsp maple syrup
  • pinch of salt
  • Reserve 1/3 blueberries and place rest of the blueberries in the instant pot.
  • Add in lemon zest, cinnamon powder, salt, lemon juice.
  • Close the lid of the instant pot.
  • Set the instant pot to “Manual” at high pressure for 1 minutes, release the pressure naturally for 10 minutes.
  • Open the lid and press cancel.
  • Turn on the sauté mode, stir well and break the blueberries.
  • Add in remaining blueberries.
  • You can taste it and if you feel it should be sweeter then add maple syrup in it.
  • Stir well, pour in a container and store in the fridge.
