Instant Pot Beef Stew

  • 1 turnip peeled and cut into chunks
  • 2 carrots peeled and cut into chunks
  • 1/4 cup beef broth
  • 1 lb beef chuck stew meat
  • 1 onion
  • 1 tbsp fresh ginger minced
  • 1 tbsp garlic minced
  • 2 tbsp tomato paste
  • 1 tbsp lemongrass paste
  • 2 whole staranise
  • 1 tsp curry powder
  • Salt and ground black pepper as required
  • 2 tbsp fish sauce
  • 1 1/2 cups water
  • 1/2 cup coconut water
  • 1/2 cup fresh cilantro chopped
  • In a small, heatproof container, place the carrots, turnip and broth. Set aside.
  • In the pot of Instant Pot, place the remaining ingredients except the cilantro and stir to combine.
  • Arrange a steamer trivet on top of beef mixture.
  • Place the container of vegetables on top of the trivet.
  • Secure the lid and turn to “Seal” position.
  • Cook on “Manual” with “High Pressure” for about15 minutes. 
  • Press “Cancel” and allow a natural release for about 10 minutes and then, do a quick release.
  • Carefully, remove the lid and place the vegetable mixture into the stew.
  • Serve hot with the garnishing of cilantro.
