Instant Pot Beef & Green Beans Soup

A dinner soup that is full of sophisticated flavors of ground beef, tomatoes and fresh green beans.

Ingredients
  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1 medium onion chopped
  • 1 tbsp garlic minced
  • 2 tsp dried thyme crushed
  • 1 tsp ground cumin
  • 3 cups fresh tomatoes chopped finely
  • 1/2 lb fresh green beans trimmed and cut into 1-inch pieces
  • 2 bay leaves
  • 4 cups beef broth
  • to taste Salt and freshly ground black pepper
Instructions
  • Place the oil in the Instant Pot and select “Sauté”. Then add the beef and cook for about 5 minutes or until browned completely.
  • Add the onion, garlic, thyme, cumin and cook for about 3-5 minutes.
  • Press “Cancel” and stir in the tomatoes, green beans, bay leaves and broth.
  • Secure the lid and turn to “Seal” position.
  • Cook on “Manual” with “Low Pressure” for about 30 minutes.
  • Press “Cancel” and do a quick release.
  • Remove the lid and stir in the salt and black pepper.
  • Discard the bay leaves and serve hot.

  1. This is a hearty and healthy soup and falls in the category of Genius Foods for my children. I had to use ground chicken, as I had to go to the town market for the ground beef. It worked equally good. However, I added a splash of hot sauce to give it a spicy touch. I will be making this one again with the ground beef next time. Thanks for sharing!

  2. Last week, the beef was on sale and so, we purchased a lot of ground beef exceeding our cooking necessity. So, this soup is perfect to dump in most of the ground beef and at the same time, I had the craving for the soup too. The soup came out thick and delicious, and it WAS a meal. Thanks for sharing!

  3. I make this soup regularly, as my picky kids are really fond of it. Stew meat is expensive in my market, so I buy thin cut steaks or ground beef. We call it the most healthy meal. Thanks for the wonderful recipe.
