Instant Pot Beautifully Colored Veggies
- 2 tbsp butter
- 1 small yellow onion chopped roughly
- 1 garlic clove minced
- 3 cup bok choy chopped roughly
- 1 pound cherry tomatoes
- 1/2 cup cream
- 1/2 cup feta cheese
- 1 cup water
- to taste Salt and freshly ground black pepper
- 1 tbsp fresh basil chopped
Place the butter in the Instant Pot and select “Sauté”.
Add the onions and garlic and cook for about 3-4 minutes.
Add bok choy and tomatoes and cook for about 1-2 minutes.
Select the “Cancel” and stir in remaining ingredients except basil.
Secure the lid and cook under “Manual” and “High Pressure” for about 5 minutes.
Select the “Cancel” and carefully do a Natural release.
Remove the lid and transfer the vegetable mixture onto a serving platter.
Garnish with basil and serve with pasta.
