Hamburger Soup

Ground beef turns a simple soup pot into the kind of dinner that feels ready for busy nights. It simmers with potatoes, carrots, celery, onions, tomatoes, broth, and herbs until the vegetables soften and the flavor settles. Each spoonful has the comfort of a burger-inspired meal without needing a bun.

Serve it with crackers, bread, salad, or a sprinkle of cheese for an easy table favorite. This recipe works for meal prep, cold evenings, or family dinners when everyone wants something filling. Let it bubble gently, then ladle it hot for a bowl that tastes like home after a long day.

Why This Recipe Works

This recipe works because the ground beef adds rich flavor and makes the soup satisfying. Potatoes and vegetables make it hearty, while tomatoes and beef broth create a warm, savory base. Simple seasonings bring everything together without making the recipe complicated.

It is also easy to adjust based on what you have. You can use fresh, frozen, or canned vegetables, swap potatoes for rice or pasta, and add more broth if you like a thinner soup. It stores well, reheats nicely, and works great for leftovers or meal prep.

Ingredients

Ground Beef: Ground beef makes the soup hearty and adds rich flavor.
Substitute: Use ground turkey, ground chicken, or plant-based ground meat.

Potatoes: Potatoes make the soup filling and give it a soft, comforting texture.
Substitute: Use sweet potatoes, pasta, rice, or cauliflower.

Mixed Vegetables: Mixed vegetables add color, texture, and extra flavor. Peas, carrots, corn, and green beans work well.
Substitute: Use fresh, frozen, or canned vegetables.

Tomatoes
Tomatoes make the broth rich and slightly tangy.
Substitute: Use crushed tomatoes, tomato sauce, or fire-roasted tomatoes.

Beef Broth: Beef broth gives the soup a deep, savory base.
Substitute: Use chicken broth, vegetable broth, or water with bouillon.

Tips

  • Brown the ground beef first for better flavor.
  • Drain extra grease so the soup does not taste oily.
  • Cut the potatoes into small, even pieces so they cook faster.
  • Use frozen vegetables to save prep time.
  • Add more broth if the soup gets too thick after sitting.

How to Serve

Hamburger soup is best served warm. It is filling enough on its own, but it also goes well with bread, crackers, salads, or simple toppings.

  • Serve with crusty bread or dinner rolls for dipping into the broth.
  • Top with shredded cheddar cheese for a cheeseburger-style flavor.
  • Pair with a green salad for a simple and balanced dinner.
