Grilled Flank Steak

A hot grill and a good piece of flank steak can turn dinner into something that feels effortless and satisfying. I like this cut because it cooks quickly, takes on marinades beautifully, and slices into tender strips when handled the right way.

The smoky edges, juicy center, and bold beef flavor make it perfect for warm evenings when I want a meal that feels relaxed but still worth gathering around.

Why This Recipe Works

Flank steak is lean, flavorful, and made for high heat, which is why grilling suits it so well. A simple marinade adds moisture and seasoning without hiding the beef, while a very hot grill gives the outside a dark, smoky crust before the inside has time to overcook. Because the cut is fairly thin, dinner moves quickly once it hits the grates.

The real secret is what happens after grilling. Letting the steak rest keeps the juices from running out, and slicing thinly against the grain shortens the long muscle fibers that can otherwise make flank steak chewy. That one step changes the texture completely. The recipe is also wonderfully flexible, since the cooked steak can go from a dinner plate to tacos, salads, sandwiches, or grain bowls. It delivers big flavor with very little hands-on cooking.

Ingredients

Flank Steak: This long, lean cut has bold beef flavor and cooks quickly over high heat. Skirt steak is the closest substitute, although it is usually thinner and may cook faster.

Olive Oil: Oil helps carry the marinade across the surface and encourages good browning on the grill. Avocado oil is a useful substitute, especially for very high heat.

Soy Sauce: Soy sauce adds salt and deep savory flavor while helping season the steak throughout. Low-sodium soy sauce works well if you prefer more control over salt.

Lime Juice: Fresh lime juice gives the marinade brightness and balances the richness of the beef. Lemon juice or red wine vinegar can provide a similar acidic note.

Garlic: Fresh garlic adds a sharp, savory aroma that mellows as the steak grills. Garlic powder can substitute when needed, but fresh minced cloves give the marinade a fuller flavor.

Tips

  • Marinate the steak for at least 30 minutes, but avoid leaving it in a strongly acidic marinade all day.
  • Preheat the grill thoroughly so the steak sears quickly instead of slowly steaming on the grates.
  • Shake off excess marinade before grilling to reduce flare-ups and help the surface brown.
  • Let the steak rest before cutting so more of the juices stay inside the meat.
  • Slice thinly against the grain, not with it, for noticeably more tender pieces.

How to Serve

Grilled flank steak is best served after a short rest, then sliced thinly across the grain so every piece stays tender. It works just as well as the center of a simple dinner as it does tucked into something more casual. Keep the sides fresh, smoky, or lightly seasoned so they complement the beef without overwhelming it.

  • Serve the slices with grilled corn, roasted potatoes, and a crisp green salad for an easy summer dinner.
  • Pile the steak into warm tortillas with avocado, salsa, and pickled onions for quick steak tacos.
  • Add chilled slices to a grain bowl with rice, cucumbers, tomatoes, greens, and a bright lime dressing.

Ingredients

  • pounds flank steak
  • 3 tablespoons olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons fresh lime juice
  • 3 garlic cloves minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ¼ teaspoon kosher salt
  • 2 tablespoons chopped fresh cilantro optional

Instructions

  • Place the flank steak in a shallow dish or resealable bag. Whisk together the olive oil, soy sauce, lime juice, garlic, Worcestershire sauce, brown sugar, cumin, smoked paprika, black pepper, and salt.
  • Pour the marinade over the steak and turn to coat it evenly. Refrigerate for at least 30 minutes or up to 4 hours.
  • Remove the steak from the refrigerator about 20 minutes before cooking. Preheat the grill to high heat, around 450°F to 500°F.
  • Take the steak out of the marinade and let the excess drip off. Place it directly over the hot grates and grill for about 4 to 6 minutes per side, depending on thickness and preferred doneness.
  • Check the internal temperature with an instant-read thermometer. For food safety, whole cuts of beef should reach 145°F followed by at least a 3-minute rest.
  • Transfer the steak to a cutting board and rest for 5 to 10 minutes. Slice very thinly against the grain, sprinkle with cilantro if using, and serve.
