Frijoles (Mexican Refried Beans)

There’s something comforting about a warm, creamy side dish that goes with almost anything. This simple bean dish is a staple in many kitchens because it’s filling, budget-friendly, and full of flavor. It turns basic ingredients into something rich and satisfying with just a little cooking.

The texture is smooth but still hearty, making it perfect for scooping, spreading, or serving alongside your favorite meals. Whether you’re making tacos at home or just need an easy side, this dish comes together quickly and tastes even better when made fresh. It’s simple food done right, every single time.

Why This Recipe Works

This recipe works because it keeps things simple while building deep flavor. Cooking the onions and garlic first brings out a rich base, and then the beans are mashed right into that flavor. Frying them after mashing gives that classic taste and slightly thicker texture that makes refried beans so satisfying. The added broth helps keep everything smooth and creamy without drying out.

It’s also a very flexible and practical recipe. You can adjust the texture based on how much you mash and how much liquid you add. It works with pantry ingredients and can be made quickly without any complicated steps. You can keep it plain or add small extras for more flavor, depending on what you like. It’s a reliable dish that fits into many meals without needing much effort.

Ingredients

Pinto beans: The classic base, soft and creamy when cooked.
Substitute: black beans for a slightly different flavor.

Onion: Adds a mild, savory depth.
Substitute: shallots or onion powder in a pinch.

Garlic: Brings strong, rich flavor.
Substitute: garlic powder if needed.

Lard or oil: Helps fry and mash the beans smoothly.
Substitute: vegetable oil or butter for a lighter option.

Bean broth (or water): Keeps the beans soft and helps adjust texture.
Substitute: chicken or vegetable broth for extra flavor.

Tips

  • Use cooked beans that are very soft for the best creamy texture.
  • Don’t drain all the liquid—some broth helps when mashing.
  • Mash to your preferred texture, smooth or slightly chunky.
  • Fry the beans after mashing for that classic refried flavor.
  • Add a little liquid at a time to control thickness.
