Ingredients

  • 6 large poblano peppers
  • 8 ounces Oaxaca cheese Monterey Jack cheese, or mozzarella, cut into strips
  • 4 large eggs separated
  • ½ cup all-purpose flour divided
  • ½ teaspoon salt plus more to taste
  • ¼ teaspoon black pepper
  • 2 cups vegetable oil for frying, more if needed
  • For the Tomato Sauce
  • 1 tablespoon vegetable oil
  • ½ small yellow onion chopped
  • 2 garlic cloves minced
  • 1 can tomato sauce 15 ounces
  • ½ cup chicken broth or vegetable broth
  • ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper

Instructions

  • Place the poblano peppers over a gas flame, under the broiler, or on a hot skillet.
  • Roast the peppers, turning often, until the skins are blistered and dark on all sides.
  • Place the roasted peppers in a bowl and cover with a plate or plastic wrap for 10 minutes.
  • Peel off the loose skins with your hands or a paper towel.
