Ingredients

  • 1 teaspoon salt divided
  • ½ teaspoon black pepper
  • 2 tablespoons all-purpose flour for coating
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 small yellow onion chopped
  • 2 carrots peeled and sliced
  • 8 ounces mushrooms sliced
  • 3 garlic cloves minced
  • 2 tablespoons all-purpose flour for the sauce
  • 2 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • ½ teaspoon dried parsley
  • 1 teaspoon Dijon mustard optional
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley optional

Instructions

  • Pat the chicken thighs dry with paper towels.
  • Season both sides with ½ teaspoon salt and the black pepper.
  • Lightly coat the chicken with 2 tablespoons flour. Shake off any extra.
  • Heat the olive oil and butter in a large skillet or Dutch oven over medium heat.
  • Place the chicken skin-side down in the pan.
  • Cook for 5 to 6 minutes, until the skin is golden.
  • Turn the chicken and cook for 3 more minutes.
  • Transfer the chicken to a plate.
  • Add the chopped onion and carrots to the same pan.
  • Cook for 4 to 5 minutes, stirring often.

  • Sprinkle 2 tablespoons flour over the vegetables.

  • Slowly pour in the chicken broth while stirring to prevent lumps.
  • Add the thyme, bay leaf, dried parsley, Dijon mustard if using, and remaining ½ teaspoon salt.
  • Bring the sauce to a gentle simmer.
  • Return the chicken to the pan, skin-side up.
  • Cover and simmer over low heat for 25 to 30 minutes.
  • Check that the chicken reaches at least 165°F in the thickest part.
  • Transfer the chicken to a clean plate.
  • Stir the heavy cream into the sauce.
  • Simmer gently for 3 to 5 minutes, until the sauce thickens slightly.
  • Stir in the lemon juice.
  • Taste and add more salt or pepper if needed.
  • Return the chicken to the sauce.
