Ingredients

  • pounds boneless skinless chicken thighs, cut into 1-inch pieces

  • ¼ teaspoon cayenne pepper optional
  • 1 can diced tomatoes 14.5 ounces
  • 1 can full-fat coconut milk 13.5 ounces
  • 1 cup low-sodium chicken broth
  • 1 teaspoon salt plus more to taste
  • ½ teaspoon black pepper
  • 1 tablespoon fresh lime juice
  • ¼ cup chopped cilantro optional
  • Cooked rice or naan for serving

Instructions

  • Pat the chicken pieces dry with paper towels.
  • Season the chicken with ½ teaspoon salt and the black pepper.
  • Heat 1 tablespoon vegetable oil in a large pot or deep skillet over medium-high heat.
