Ingredients

  • 2 cans 15 ounces each black beans, drained and rinsed
  • 8 ounces cremini mushrooms finely chopped
  • ¾ cup breadcrumbs
  • 2 tablespoons ground flaxseed
  • ¼ cup nutritional yeast
  • 5 tablespoons water
  • 1 tablespoon olive oil
  • 1 small yellow onion finely chopped
  • 3 garlic cloves minced
  • 1 tablespoon soy sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper. Stir the ground flaxseed and water together in a small bowl, then leave it for about 5 minutes to thicken.
  • Heat the olive oil in a skillet over medium heat. Add the onion and mushrooms and cook for 6 to 8 minutes, until softened and most of their moisture has cooked away. Stir in the garlic for the final 30 seconds.
  • Place the black beans in a large bowl and mash them with a fork or potato masher. Leave a little texture rather than turning them into a completely smooth paste.
