Ingredients

  • 3 lb. beef chuck roast
  • 2 tbsp. oil
  • 4 cloves garlic minced
  • 2-3 chipotle peppers in adobo chopped
  • 2 tbsp. adobo sauce
  • ¼ cup lime juice
  • 1 cup beef broth
  • 1 tsp. cumin
  • 1 tsp. oregano
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 2 bay leaves

Instructions

  • Cut the beef into large chunks and pat dry.
  • Heat oil in a pan and sear the beef on all sides until browned.
  • Transfer beef to a slow cooker.
  • Add garlic, chipotle peppers, adobo sauce, lime juice, beef broth, cumin, oregano, salt, pepper, and bay leaves.
  • Cover and cook on low for 8 hours or until the meat is very tender.
  • Remove bay leaves and shred the beef using forks.
  • Mix the shredded beef back into the sauce.
