Baked Haddock

Baked haddock is one of those dinners I rely on when I want something light, simple, and still satisfying. The fish turns tender and flaky in the oven, while a crisp breadcrumb topping adds just enough texture.

I like finishing it with lemon and parsley so the flavors stay bright. It is easy enough for a weeknight, but plated with vegetables and potatoes, it feels polished enough for company too.

Why This Recipe Works

Baked haddock works because the mild fish cooks quickly and pairs well with simple seasonings. A light breadcrumb topping adds crunch without overwhelming the delicate fillets, while melted butter helps the crumbs brown and keeps the surface from drying out. Lemon juice adds acidity, and garlic gives the topping enough savory depth to make every bite feel complete.

The method is straightforward and dependable. Haddock only needs a short time in a hot oven, so it is easy to prepare alongside roasted vegetables or potatoes. Using fillets of similar thickness helps them finish at the same time, and baking them just until opaque keeps the texture moist and flaky. The result is a clean, comforting fish dinner with a crisp top, tender center, and plenty of fresh flavor without a complicated sauce.

Ingredients

Haddock Fillets: Haddock has a mild flavor and delicate, flaky texture that works especially well with simple baked preparations. Cod or pollock can substitute if haddock is unavailable.

Breadcrumbs: Breadcrumbs create the crisp topping that contrasts with the tender fish. Panko gives the crunchiest finish, while regular breadcrumbs create a finer, more even crust.

Unsalted Butter: Butter adds richness and helps the breadcrumb topping brown in the oven. Olive oil can substitute for a lighter finish with a slightly different flavor.

Lemon: Fresh lemon juice brightens the fish and balances the buttery topping. Lime can work in a pinch, although it gives the dish a sharper citrus note.

Garlic: Garlic adds savory depth without overpowering the haddock. Fresh minced garlic gives the strongest flavor, while garlic powder is a convenient substitute.

Tips

  • Pat the haddock dry before seasoning so the topping sticks better and the fish does not release excess moisture.
  • Use fillets of similar thickness so they finish baking at roughly the same time.
  • Press the breadcrumb mixture lightly onto the fish instead of packing it down too firmly.
  • Avoid overbaking, since haddock can dry out quickly once fully cooked.
  • Serve immediately after baking to enjoy the crispest breadcrumb topping and the juiciest texture.

How to Serve

Baked haddock is best served hot, right after it comes out of the oven, while the breadcrumb topping is still crisp. The mild flavor makes it easy to pair with both fresh and comforting sides, so you can keep the meal light or make it more substantial depending on the occasion.

  • Serve it with roasted potatoes, green beans, and lemon wedges for a classic weeknight dinner.
  • Pair the haddock with rice pilaf, steamed broccoli, and a simple cucumber salad for a lighter plate.
  • Add mashed potatoes, roasted carrots, and a spoonful of tartar sauce for a more traditional, comforting seafood meal.
