Ingredients

  • pounds chicken pieces thighs or drumsticks
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 1 small bell pepper chopped
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • 1 bay leaf
  • 4 cups chicken broth
  • 1 cup white rice
  • 1 cup green peas
  • ½ cup sliced green olives
  • Salt and black pepper to taste
  • Fresh cilantro for garnish optional

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Season chicken with salt and pepper. Brown on all sides, then remove and set aside.
  • In the same pot, cook onion and bell pepper until soft.
  • Add garlic and cook for 30 seconds.
