Can't beat my grandmother's potato "pancakes" made after either Thanksgiving or Christmas w/leftovers----mashed potatoes, corn, whatever, mixed with an egg and griddled into a pancake to serve alone or with a meat. I've been trying for many years to duplicate, but can't get it "just so." Maybe it's the grandma love that made it so good?
