Instant Pot Thai Chicken Stew

Ingredients

  • 1 pound chicken
  • 2 tbsp olive oil
  • 1 tbsp bell pepper
  • 6 green onions chopped
  • 1/2 cup pineapple juice
  • 4 garlic cloves minced
  • 2 tbsp allspice
  • 1 tbsp basil dried
  • 1 tbsp salt
  • 2 tbsp lemon juice
  • 1 tbsp pepper
  • 2 carrots chopped
  • 2 cup Thai veggies diced

Instructions

  1. Put the olive oil, garlic and cinnamon in the Instant Pot and select “Sauté” for 2 minutes.

  2. Add chicken, veggies and the rest of the ingredients in the instant pot.

  3. Close the lid and set the instant pot to “Manual” and cook for 35-40 minutes at high pressure.

  4. Serve with Thai sauce.
