Ingredients

  • 4 mahi-mahi fillets about 1.7 lb
  • 6 tomatoes peeled and diced
  • 1 teaspoon onion powder
  • 2 teaspoon garlic powder
  • 3 tablespoon butter
  • 2 tablespoon water
  • 2 teaspoon chili powder
  • dried oregano to taste
  • salt and pepper to taste
  • fresh minced cilantro for serving

Instructions

  • Sprinkle your fish fillets with salt, pepper and dried oregano.
  • Place butter into your Instant Pot and press “Sauté”.
  • Add onion powder , garlic powder , tomatoes, chili powder, salt and pepper and saute for 4 minutes until you get a thick sauce.
  • Add fish and water and stir well.
  • Close the lid and cook on high pressure for 5 minutes.
  • When cooking time is complete, do a quick pressure release.
  • Sprinkle with fresh cilantro and serve.

  1. Thank you for sharing this recipe. I don't cook fish often. Knowing I could trust my instant pot with it made it less anxiety producing. It turned out great. Since tomatoes are in season, it was a perfect match.

  2. I marinated the mahi fillets in a bit of adobo and cumin powder. Instant pot contained rice covered with a garlic broth and olive oil. Added a jar of pineapple salsa, frozen mango chunks, and the fish on top. Cooked using the rice setting. Topped with a plethora fresh cilantro.

  3. Used a can of tomatoes and put the fish on top of the sauce. Wasn't sure when to add oregano, so I just sprinkled it on the cooked fish. I had planned to make pasta, as in the picture. However, I decided to make spaghetti squash, instead. Excellent combination...the fish, sauce, and squash! Definitely a recipe to save. Thank you.
