Can I Use Regular Carrots?

This recipe calls for baby carrots to make prep easier, but yes, you could easily substitute regular carrots.

Just peel and cut them into bite-sized pieces.

To cut whole carrots, I like to cut them in half lengthwise and then slice them to create half-moon shapes.

Another fun cut for carrots is known as the oblique cut, in which you roll the carrot in quarter turns and cut on a diagonal to make a sort of rounded triangle shape.

This is just for added visual appeal—any cut of a similar size will work!

Can I Use Frozen Peas?

Definitely! Frozen green peas are much easier to use than shucking fresh peas, plus fresh peas have a relatively short season while frozen peas are commonly available year-round.

Frozen peas cook very quickly so you don’t even have to fully defrost them first!

Just adding to the hot soup, the peas will heat through in about 3 minutes.

Do I need to shell the peas?

You can but you don't have to. Sometimes I shell the peas and sometimes don't 🙂

What Type of Potatoes Should I Use?

This recipe calls for 2 potatoes and 1 sweet potato.

For the regular potatoes, you can use any medium-sized potato—red potatoes, white potatoes, Russet, or Yukon gold will all work well.

If you love sweet potatoes, you can use 2 sweet potatoes and only 1 regular potato, or 100% sweet potato! If you hate sweet potatoes, just leave it out and add another regular potato.

This recipe is very flexible, which is part of its appeal.

What Type of Wine is Best to Cook With?

It is best to cook with a dry wine that you like to drink since there will likely be most of the bottle leftover after using what you need for cooking.

Some dry white wines that work well for this recipe are Sauvignon Blanc or Pinot Grigio.

You can even use a homemade wine :]

If you prefer not to use alcohol, you can replace the white wine with white wine vinegar or a little lemon juice.

Ingredients

  • 2 pound stew beef
  • 2 tablespoon butter
  • ½ cup white wine dry
  • 1 large onion chopped
  • 12 oz. baby carrots peeled and cut into halves
  • 2 potatoes in cubes
  • 1 sweet potato in cubes
  • 1 tablespoon dried thyme
  • cups beef broth
  • 2 teaspoon dried parsley
  • 1 bay leaf
  • ½ teaspoon salt
  • ¼ teaspoon black pepper black pepper,freshly ground
  • ½ cup green peas

Instructions

  • Season the beef with salt and black pepper.
  • Put the butter and beef in the Instant Pot and select “Sauté”.
  • Sauté for 3 minutes on each side until browned.
  • Add the rest of the ingredients and stir well.
  • Close the lid and cook on high pressure for 20 minutes.
  • When cooking time ends, white for a natural pressure release for 10 minutes, and then release the pressure quickly using the release handle.
  • Add the green peas, stir and reserve for 3 minutes.
  • Serve and enjoy!

  1. I made stew in my instant pot for the first time. I kept getting the burn food message. I had sautéed the meat and then added the vegetables. Pressure cooked it then and still got the food burn message. What am I doing wrong?

    1. Are you adding any liquid to the pot? The Instant Pot requires a certain amount of liquid to work properly, usually 1/2 cup or 1 cup.

  2. Love using my Instant Pots (having 3 with 1 being 3 qt.) Also love that I can adjust the recipe size with our household being 2 empty nest grandparents, but I can up-size the recipes when the grandkids( 8 teens) visit!!

  3. I'm sorry in advance if this is a repetative question for you. Are all your recipes for a 6qt insta pot ? If so, I have purchased 3qt. Is it true that I have to just cut the recipes in half to be able to make them in the 3qt ? Thank you

    1. This soup won't freeze very well because the potatoes absorb the moisture and it can become a little grainy once defrosted.

  4. I made this, however after 20 minutes, the veggies turned to mush. The meat was delicious and tender. Would it be better to do the veggies after the meat has been cooked, or, for example for about 5 or 6 minutes of the time remaining

    1. I'm sorry to hear that. If you'd like to vegetables to have a bit more shape and texture, then yes, try adding them towards the end of the cooking time. You will need to do a quick release to add the vegetables and then wait a second time for the pot to come to pressure though, so it will take a little longer.

    2. I had the same issue. The sweet potatoes were completely gone! No evidence they were in the recipe! The broth (an instapot bone broth made earlier in the day) was amazing as the disintegrated sweet potatoes added an unexpected thickness and sweetness to the broth. I do not add flour to make a slurry as several family members are celiac or wheat sensitive. May have to try adding carrots and white potatoes toward the end. The meat was absolutely perfect! I have never had success with my roast meat until the instapot.
